Orecchiette Cime di Rapa: the magnification of the Pugliese tradition

The Orecchiette with Cime di Rapa is the most famous dish of the Pugliese tradition.

Cime di Rapa (Turpin tops) is a typical vegetable of Southern Italy, in particular, Lazio, Puglia, Molise, and Campania. In addition to its goodness and versatility in the kitchen, the turnip top is very appreciated from the nutritional point of view because it contains mineral salts, vitamins, antioxidants and has a low-calorie content.

The Orecchiette instead is a type of Pugliese homemade pasta made strictly by hand, and in fact, this dish was really enhanced by the Pugliese families, specifically by the Apulian grandmothers who milled kilos and kilos of Orecchiette with Cime di Rapa.

We specify that this recipe that we are going to present to you provides a small change to the original recipe while maintaining the original ingredients of the recipe, which are: Orecchiette, Cime di Rapa, Olio EVO, Anchovies, and Chili Pepper.

To make this dish for four people we need:

  • 400 gr Orecchiette Pugliesi;
  • Turnip tops or 1 jar of turnip tops in The Italian Club extra virgin olive oil;
  • EVO oil q.b;
  • 3 anchovy fillets in oil;
  • Chili pepper;
  • Salt to taste;

 In a pan pour the extra virgin olive oil (instead you can use the oil of turnip tops), garlic and chili and sauté.

Immediately after we use half of the turnip tops (in the case use the jar, just half of it) and sauté in a pan with oil.

In the meantime, while waiting for the Cime di Rapa, in plenty of boiling salted water, pour the Senatore Cappelli wheat ears, which we will drain a few minutes before cooking time.

Now comes the moment of the small variation, now we will create a cream of Cime di Rapa. Take the other half of the Cime di Rapa and put it in the mixer with oil and a little cooking water. Whisk everything until you get a creamy consistency. 

Drain the orecchiette al dente and let them sauté with the turnip tops and the cream made previously. In case you need it, to create the right consistency, you can help yourself with some pasta cooking water. 

Mix everything and let the cream adhere to the pasta, shake it a few times and voila - our pasta is ready.
