Terra Noscia is a small family-run company in Salento that deals with the production of typical Apulian preserves.  

Each product of the Terra Noscia company is born from a deep respect for traditions, from raw materials of the highest quality and completely handcrafted processing.  

All the raw materials used are “Km0” and are processed fresh.  Salt capers are a brilliant example of the excellent quality that distinguishes all the products we have selected.  The caper has found an ideal soil and microclimate for millennia in the most extreme part of Puglia, known as Salento.  It is precisely in these areas that the Terra Noscia company grows capers.  In the month of May, the completely manual harvesting of the still closed buds of the caper flower begins, which consists of the delicious green balls that we all know and which are so important in Italian cuisine.  Immediately after harvesting, the caper buds are transported to the nearby processing laboratory where they are washed, removed, and left to ripen in salt for about 3 months.  After the ripening period, they are dried by their vegetation water and put in pots with more sea salt.

Ingredients: Capers (70%), salt (30%).

This product is free of GMOs, Dyes, Preservatives, Antioxidants (chemical).

Capers are very rich in beta-carotene and flavonoids, compounds with antioxidant action, in particular quercetin, rutin, and kaempferol.  They have naturally beneficial effects on cholesterol metabolism, as they lower blood levels, and with evident anti-inflammatory and antithrombotic action.

Usage Tips:

Before use, the capers must be rinsed until the salt is completely removed.  

They can be paired with green or potato salads but also with recipes of stewed meat with white wine or alla cacciatora or even with pizzaiola or puttanesca pasta.
