The production of this compote begins with the harvest at the right point of ripeness of the best figs that are processed after a few hours. The processing method is the classic method used since ancient times for the preservation of fruit. The figs, in fact, after being carefully cleaned and washed, are simply cooked in a pot with the sole addition of cane sugar. The result is a product that enhances the flavor of the fruit used and with the artisan characteristics that only our mothers can match. All this is proven by the quantity of fruit used; for the production of 100 grams of jam, 155 grams of juicy figs are used.
