The Bonat farm is a family business that deals with the production of Parmigiano Reggiano D.O.P. of high quality for 4 generations. What distinguishes this company and allows it to produce one of the most prized and awarded Parmesan on the market is that it is a "complete cycle" company. All Parmigiano Reggiano D.O.P. of this company is produced exclusively with the milk of only 100 cows raised by the company itself, all of the Friesian, Reggiana Red Cow, and Brown Cow, according to the best tradition. The cows, in turn, feed exclusively on the hay produced in the fields of the company, fields of the stable, centennial, and organic meadow that contain herbs and essences today unknown and unavailable in the most recent sowing meadows. And it is precisely in the particular richness of this hay one of the secrets of this exceptional Parmigiano Reggiano D.O.P., in fact, it gives the milk and therefore the cheese some exclusive aromas. This fantastic cheese has been produced since the Middle Ages when the Benedictine monks started the production of these large wheels destined for long aging. The Bonat farm produces Parmigiano Reggiano D.O.P. with aging ranging from 18 months to 7 years and has collected Palmarès without equal in the sector and of which all its labels can boast. We at The Italian Club have selected 2 maturations, 28 and 48 months, in both cases, we can speak of absolute excellence in the world of Parmesan, products for true connoisseurs, as demonstrated by the countless sector awards collected by the company.

Seasoned for 26-28 months

Parmigiano Reggiano D.O.P. 26-28 months it reached the optimal degree of ripeness to be tasted. The crumbly and grainy dough has a perfect balance between sweet and salty. It lends itself to all gastronomic preparations, even grated on first courses.

Seasoned for 48 months - Gran Riserva

Parmigiano Reggiano D.O.P. Gran Riserva 48 months is extremely valuable and is particularly dry, crumbly, and grainy, with an intense and decisive aroma. The notes of spices and dried fruit are predominant. It is perfect to be grated, but also to be tasted with honey or balsamic vinegar.
