Pastificio Manta is a small Apulian pasta factory that makes excellent raw materials and completely artisanal processing the basic rules for the creation of products of the highest quality. All the semolina and flour used by the company for the production of its exceptional pasta come from grains grown at km 0, in full respect of the territory, of which the company controls every phase of growth up to milling. The pasta cuts we have selected from this company are among the most typical of the Apulian and Salento tradition, many of which are made entirely by hand or bronze drawn with a very slow and completely natural drying at very low temperatures.
Senatore Cappelli wheat, whose semolina was used to make this pasta, is all-Italian excellence, noble and ancient quality with unique nutritional and organoleptic characteristics that make it one of the best in the world. It has a high protein content and a low sugar content is rich in trace elements such as magnesium, potassium, calcium, and zinc and in vitamins of group B and E.

These pasta cuts with a rough exterior derived from completely manual processing or bronze drawing are extremely versatile and able to perfectly hold the sauce, making each dish unique and full of warmth. The most traditional dressing is a ragù with meatballs and a sprinkling of sheep's cheese.
