Pastificio Manta is a small Apulian pasta factory that makes excellent raw materials and completely artisanal processing the basic rules for the creation of products of the highest quality. All the semolina and flour used by the company for the production of its exceptional pasta come from grains grown at km 0, in full respect of the territory, of which the company controls every phase of growth up to milling.
Trofie is a typically Ligurian pasta that was almost unknown outside the production areas until the middle of the last century. This is above all because, its typically tapered shape, it was possible to reproduce it exclusively by hand, just as, for centuries, Ligurian housewives had prepared them in their homes and in small village shops. The Manta pasta factory has taken up this ancient tradition by producing this ancient pasta in the traditional way. In the laboratory of the pasta factory, starting from the semolina of the best 100% Italian grains, the pasta masters handcrafted the dough from which they manually obtained this fantastic pasta with a unique shape. Subsequently, the trofie undergoes a slow natural drying, at very low temperatures, which maintains the nutritional and organoleptic qualities unaltered.
